Making our tastebuds happy.





I'm back in Rotterdam! So to celebrate we got together at Cristina's and Joan's to cook a delicious meal together following one of Jamie Oliver's 30 minute recipes that I got for Christmas from Helen. It took quite a bit of coordinating to get it right. Again, I made the mistake of not reading the whole recipe before starting to cook, but the consequences weren't too bad. We made a good team!

The result was the most delicious satay chicken I've ever had, wrapped in lettuce with fresh egg noodles seasoned with red onion, chili, coriander, soy sauce, fish sauce (thanks Luce!), lime zest and its juice and cashew nuts. YUM!

The desert that followed was perfect and fresh: pineapple with red fruits sprinkled with brown sugar, lime and mint.

Recipe for the satay sauce:
1/2 a small bunch of fresh coriander
1 fresh red chilli
1/2 a clove of garlic
3 heaped tablespoons good quality crunchy peanut butter
soy sauce
a 2 cm piece of fresh giver
2 limes

Put the coriander (stalks and all) into the food processor (I used one of these) with the chilli (stalk removed), peeled garlic, 3 heaped tablespoons of peanut butter and a lug of soy sauce. Peel and roughly chop the ginger and add. Finely grate in the zest of both limes, then squeeze in the juice from 1 of them. Add a couple of splashes of water and whiz to a spoonable paste. Season to taste.
